Chicken Madras

1 tbs oil
450 g (1 lb) boneless, skinless chicken breast, cubed
1 onion, sliced
2 tbs hot curry powder
400 g chopped tomatoes
1 tbs tomato puree
1 tbs lemon juice
150 ml (1/4 pint) stock

Methods/steps

1)  Heat the oil in a frying pan and fry the chicken and onion for 5-6 minutes until browned. 
2)  Add the Hot Curry Powder and cook for 1 minute. 
3)  Add the stock to the pan with the remaining ingredients. 
4)  Bring to the boil stirring. 
5)  Simmer for 15-20 minutes.

Additional Tips

Adding spices at the beginning of cooking so that they do not have a raw taste and their aromatic flavours have a time to permeate the whole dish.  Serve with boiled rice, jacket spud or chips
