Vegetables in Bolganaise/ Chilli Sauce
Ingredients
1 Garlic clove, crushed
3g of Celery, finely chopped
75g Onion, finely chopped
60g Mushrooms chopped
Half a leek, finely sliced
1 small carrot finely sliced
2 tbsp olive oil
150ml beef stock
3 1/2 tbsp tomato puree
1 1/2 tsp caster suger
1 tbsp tomato paste
250g Beef Mince
2 cans of chopped tomatoes (400g)
Methods/steps
1) Put 1bsp oil in pan and cook onion for 2 min
2) Add in the vegetables and cook until vegetables are soft about 8 mins
3) Add the garlic
4) Put in the stock and simmer about 9-10 mins
5) Put all into a blender and puree
6) In a large frying pan 1tsp of oil fry mince
7) Add chopped tomatoes, sugar, tomato puree and paste
8) Leave to simmer for half an hour
9) Add in the blended vegetables and cook for couple of mins
10) at this point you can add to your spaghetti, lasagne or any dish that requires a tomato based sauce, also can be used as chilli just adding a tin of kidney or baked beans in the last couple of mins




Additional Tips
This sauce can be put in jars a kept in fridge for a couple of days, obviously minus the mince beef, and can be frozen until required
