Pasta Puttanesca its Quick!

450g/1lb Penne pasta

6 Plum tomatoes chopped

2 Garlic cloves

4 tbsp Olive oil

2tbsp Black olives pitted

2 tbsp Drained Capers

1 Bunch of parsley (flat-leaf) chopped roughly

Salt and pepper

Methods/steps

1)  Cook pasta according to instructions

2)  Place tomatoes, garlic and olive oil in a food processor, and blend until a rough puree

3)  Place the puree into saucepan to heat up slowly, for about 4-5 mins, occasionally stirring

4)  Drain the pasta

5)  Stir in the olives, capers and chopped parsley, into the puree

6)  Then add the pasta, make sure its all mixed up together and all pasta is covered in sauce

7)  Add the salt and pepper to season

Additional Tips

Serve with some lovely salad
