Mexican Chicken Casserole

2 tbs oil
1 onion, chopped
450 g (1 lb) boneless, skinless chicken breasts, cubed
2 tsp Schwartz Chili Powder Mild
Salt & pepper
400 g (14 oz) tin chopped tomatoes
400 g (14 oz) tin mixed beans, drained and washed
125 g (4 oz) tin sweetcorn
1 red pepper, sliced

Methods/steps

1)  Pre-heat oven to 180C, 350F, Gas Mark 4. 
2)  Heat oil in a pan and fry onion and chicken for 3-4 minutes until browned. Transfer to an ovenproof dish. 
3)  Stir in remaining ingredients.
4)  Cover and cook for 45 minutes.

Additional Tips

Serve with rice, pasta or some yummy tacos.

I have also seen this made as a filling for lasagne too.
